What you’re looking at is a photograph of the Fairmont Hotel Commercial Wine Cellars Chicago Illinois.  I’d like to take you on a tour of the drawings for these wine cabinets.

What you’re looking at is an overhead or plan view.  This is showing the whole area of the round lobby.  This is the doorway leading into the lobby, this is a bar that is in the lobby and these are the wine cabinets rounded behind and as well as on the other side of the door.

Each elevation has a letter designated – Elevation A, B, C, D, and E.  We are going to walk through these one at a time.  Elevation A and elevation E are the same; elevation B is all commercial wine storage; elevation C and D are chocolate storage on the bottom, cheese storage on the bottom, and commercial wine storage on the top.

We have a total of 858 bottles that can be stored in these cabinets.  Elevation A and E which are the same have two doors.  These are glass doors at the bottom and you have a horizontal waterfall display in a Lattice design.  This shows where you can see your labels in the front as well at the back bottles.

On the top is more of a locker that holds 750ml bottles. Down below you have a dry storage area which means this area is not cooled; it’s just an open area like a drawer where you can store miscellaneous items.
The top we have hidden behind a panel is a split system evaporator a CC1800 which chills the entire column.  We’ll move on and there are three of these in section A and three in section E.

Moving on to section B, we now have three doors.  We have the door for the individual 750s, a door that holds the horizontal waterfall, and a door at the bottom that has an open shelf.  This is right behind the bars so that the bartender has a place to put his open bottles and have them stand up. Again you have the split system at the top cooling the entire column.

Elevation C is meant to cool your chocolates on the bottom and your wine on the top.  It has two split systems, one for the bottom section and one for the top two sections so that they can be cooled at different temperatures.
We have three glass doors; we have a cooling system at the top and another cooling system halfway down and again dry storage at the bottom.

Elevation D is just like elevation C.  It has its own cooling for cheeses so that we can regulate the bottom to be the proper temperature to store the cheeses.

I want to show you a few more photographs of the completed commercial wine cellars Chicago Illinois project.  This of course is in the lobby area.  We will go to the next one looking from the left side, you can see that there are lockers at the top but the storage has two doors on it.

The next photo shows you where there are three doors going all the way around.  You can see the ladder and rail.  This one again shows the ladder and rail going all the way around.  This one is a close-up, it is a rolling ladder and it shows the hardware on the doors and the upper cabinets they all have locks.

Wine Cellar SPecialists is proud to introduce our new Kessick Estate Design Series Modular Wine Racks Illinois.  These are our modular wine racks and we’re going to show you exactly what we’re talking about.

The Kessick Estate Design Series is four different groups of pre-designed wine racks Illinois that come in various widths and various designs.  As you can see KED-1 has the X-bins on the bottom and individual racks above the glass rack.

KED-2 has the diamond bin below, bins on each side, and individual bottles above with an arch.  KED-3 has a diamond bin below and individual bottles all the way around with an arch and KED-4 has bins below, magnum rows, a diamond bin in the center, a glass rack on each side of the arch and individual bottles above.

To explain how the program works, we will look at the KED-4 group in the series.  Each cabinet in the KED Series has the same depth and height, 84 3/4 inches high and 12 inches deep.  The KED-4 Series, this particular module is the KED-484.  Now what this means is the 4th group, the KED-4, and it’s 84 inches wide, so that makes it KED-484.

In each group there are 8 different widths available – 56 inches, 64, 72, 84, 92, 100, 108, and 120 are available in the KED-4 group.  Each one is numbered according to how wide that particular series is.  The center module is the same on every module and the width is what varies, to increase or decrease the size of the outside cabinets.

A quick look at all eight sizes in the KED group varying from quite narrow to very wide, so we can cover most any sized wall.

There are many features in the Kessick Estate Design Series modular wine racks and each design series, each module contains a solid mahogany tasting table, and every module contains diamond bins.  Every module also contains individual columns.

Now the 1 and the 4 both have stemware wine racks.  They are a little bit different.  For KED-1, the stemware rack is across the top, while in the KED-4 series, the stemware racks are on each side of an arch.
The KED-1 and 3 both have individual columns on the base whereas the KED-2 and 4 have box storage on the base.  The KED-4 also has magnum storage.

Each of these racks is created in Sapele Mahogany.  Now the Sapele Mahogany is a standard wood in the Kessick Series Wine Racks Illinois.  It’s a much darker wood, it has moisture and mildew resistance, it’s excellent for wine cellars, or you can also put it in your living room.

I’d like to walk you through the Reynolds wine cellar design and final photos.  What you’re looking at is the overhead plan view of the Reynolds Wine Cellars Seattle Washington and they have a sitting area out here and the wine cellar doors that enter into the wine cellar itself.

Each elevation is designated by a letter – elevation A being the back wall, elevation B the corners, and elevation C the two sidewalls.  You’ll notice there’s a total of 1,367 bottles in the Reynolds Wine Cellars Seattle Washington.

Elevation A is the back wall and this is the main while you look at when you come through the wine cellar doors. The Reynolds chose to do their wine cellar in kind of a French theme.  It is very elaborate with a lot of hand-carved detailing.

You have your solid wine cabinets with adjustable shelves at the bottom.  We have drawers above; these all have hand-carved grapevine designs.  We have drawers here under the cabinet doors.  These are glass cabinet doors with cathedral detailing.

You have a solid arch with a pop light opening.  We have shelves going up each side, individual bottle storage on the left and right, and above on the top.

You will also notice the columns, they are hand-carved columns, and they have to detail leaf design at the top and large detailed crown molding as well as a large detailed base molding.  The cabinet itself is 27 inches deep at the bottom which means it is a double-deep depth, and the top is 16 inches deep.

We move on to elevation B which are the corners.  These are the upper side of the corners and these are individual bottle racks.

Elevations C at the left and right sides; have horizontal display racks going across the center.  We have solid X bins and X cubes on the left and the right side.

Again we have the columns, the hand-carved columns, the large crown, and the large base.  We have LED lighting along the display row.  We have a 13 1/2 inch bottle depth here.  You have raised panels on the end of the left wall where it can be seen from the outside.

Here you have some detail on our carved crown molding and base molding.  Here are your details on the cathedral and on the crown molding detail on the end of the panel.  This looks like a chair rail but it’s actually the columns and it’s showing the LED ribbon lighting along the horizontal displays and the panel base molding detail.

Now I want to get into the finished product.  It is a beautiful wine room.  Here are a few pictures showing the cathedral windows and detailed hand-carved grapevine design, the solid arch, and here are the cathedral window wine cabinets open.

3 Popular White Wines and Their Proper Wine Storage

White wines are wines derived from various grape varieties. They are usually made from the skin and/or juice of grapes; their color range from yellow-gold, yellow-green, to straw-yellow. White wines are typically paired with meals that are lighter and the ruling that “white wines are best with white meats” is still followed up today.

It is said that white wines have more cardiovascular benefits than red wines and also have antioxidants. There are a lot of varieties of white wines present in the market. Let us discuss the popular whites that are usually present in Chicago wine cellars and wine menus of restaurants.

Chardonnay
Let’s talk about Chardonnay, the “King” of white wine. Chardonnay originated in Bourgogne, France. It is the most popular white dating back to the 1980s. It is the most important ingredient in making sparkling wines- especially champagnes. Chardonnay is best paired with salmon, grilled chicken, shellfish, and pasta with white sauce.  It is said to be well-balanced in terms of taste.

It can be a bit sweet or fruity and sometimes has a hint of pear or apple flavor. If it is fermented in new oak barrels, a hint of buttery taste can be imparted into it. The top countries that grow Chardonnay vines are the USA, France, Australia, and Italy.

Sauvignon Blanc
Sauvignon Blanc is acidic and crisp and is the lightest of all the white wines. It comes from a green-skinned grape that is grown in the Bordeaux region where it is blended with Semillon which is another type of white wine.

The taste of this wine usually depends on the climate. Its taste can be a bit citrusy and grassy. This is good to match seafood dishes and white meat. It also goes well with Chevre cheese and sushi.

Riesling
The last of the most popular and major types of white wine is Riesling. Riesling comes from the Rhine region in Germany. This wine is seldom oaked. In 2004, it was said to be the world’s 20th most grown variety. The character and quality of this wine are greatly influenced by the place where it originated.

In 2006, it was the variety that was mostly grown in Germany accounting for 20.8% of the world’s supply.  Riesling is commonly grown in cold locations and regions. Other countries that cultivate this variety are Canada, South Africa, China, Ukraine, and many others.

In terms of taste, Riesling has a lighter taste than Chardonnay. It has a fresh apple aroma. This is best paired with pork, fish, and chicken. Its crispiness is a good pair with tuna and salmon. It is also good with some Japanese dishes.

Proper Wine Storage for White Wines

White wines are best served at a temperature of 45 to 50 degrees Fahrenheit. If you plan on preserving them, make sure to maintain a temperature of 52 to 57 degrees Fahrenheit in your Chicago wine cellar or wine refrigerated cabinet.

If you are just planning to store it up until it is consumed, for example, the day before a party, make sure that you maintain a temperature of 45 degrees Fahrenheit in your wine refrigerator. Remove wine from the fridge to warm it up a bit before serving it to your guests. Remember not to place it at an excessively cold temperature because it might flatten the aroma and vibrant flavors of the wine.

In terms of aging, white wines are not advised to be aged for a very long period of time. They are at their best when consumed at least two to three years from the year they originated. However, some white wines like Chardonnay, Riesling, and Sauternes of high quality are good when aged.
